The client

The Restaurant Group operates 650 restaurants and pub restaurants across the UK, under its Wagamama, Frankie and Benny's, Garfunkels, Chiquito, and Brunning & Price brands.

The challenge

The Restaurant Group, the UK's largest casual dining business, wanted to improve 'check size' and reduce energy usage at its Chiquito restaurants. In particular, the company wanted to explore how to increase 'attachment rates' – i.e., encouraging customers to buy starters, sides, salads, desserts and drinks with their main meal. It was also keen to minimise electricity and gas waste by encouraging behaviour change in its kitchen staff.

The solution

In four weeks, Quorso's dedicated Data Team built an automated pipeline to ingest weekly sales data and hourly gas and electricity usage for 80 restaurants. Quorso's intelligent analytics layer then compared sales of each menu item at each service each day against a control group of similar restaurants. Likewise, Quorso analysed electricity and gas use by day part, e.g., 'fire up', 'overnight'.

For the first time, restaurant GMs could see their sales of each product by time of day and the central Marketing Function could see the exact success of their promotions (e.g., 'cocktail bingo'). GMs recorded their actions and promotions to boost sales, measured the extra revenue from those business plans, and learnt what was working for their colleagues around the country.

The impact

Within the first six months of use, the Chiquito team had taken over 400 actions, driving a 2% increase in sales, and reducing energy cost by 8%. And along the way, some of those actions went viral. For example, Anthony's 'cocktail bingo' promotion drove a 130% increase in cocktail sales, and was subsequently adopted by tens of other restaurants resulting in a 4% overall increase in cocktail revenue.
